I had such a delicious breakfast this morning, I’m both thrilled and full right now. You know I’m against going hungry, it irritates me 🙂
– 1 cup of mung beans soaked in water for at least 8 hours
– 5 tablespoons of water
– Salt, cumin, paprika, garlic powder (optional), any spices to your taste.
– Olive oil for cooking
The amount of mung beans soaked is 1 cup. I didn’t measure it beforehand because I always soak them before bed thinking “I’ll soak these and shape them in the morning” and I definitely don’t measure it 🙂 If there’s any left over, you can make it again the next day. Once you make it, you’ll want to make it again and again, I’m going to make it again tomorrow 🙂

I blended mung beans, water, and spices in a food processor. My long-held craving for wrapping something in flatbread finally ended. This satisfied my need perfectly.
I also turned down the heat on the second flatbread while I made the salad and waited for the tea. It stayed in the pan longer. That one was crispy too, oh my god, I’m going crazy! 😍
