
I made something delicious. You know we’re trying to live a zero-waste lifestyle. While thinking about how to use the leftovers, this amazing thing came out. 🙂 I added vegetables from the refrigerator to the leftovers and turned it into something amazing. I’ll also explain how you can make it without the leftovers. It was incredibly delicious.
When I juice vegetables, I add ginger, lemon, and fruit last. I juice the vegetables first so I can use their pulp. I usually add it to crackers, but this time I made a pastry with it. It was delicious. And there’s no flour involved.
– I sautéed spinach, beetroot, and carrot pulp in olive oil. I also added 2 leeks. There’s no need to use up any leftover pulp from the vegetable juice. You can sauté the same vegetables in a pan. Grate the beetroot and carrot. Finely chop the leeks. Add the spinach last, after all the other vegetables are sautéed, because it cooks very quickly, you know 🙂 Don’t add any water; sauté it in its own juices, stirring constantly, over low heat. Let it release its juices and then let them reabsorb. The vegetable portion is almost 600-700 grams. So, this is a large baking dish.
-I whisked 5 eggs and added 3 tablespoons of yogurt. (Those who don’t want to consume dairy products can use plant-based milk instead.) I whisked everything together and added the sautéed vegetables. I added salt. Because there are so many vegetables, there aren’t many eggs. Don’t be intimidated 🙂

-I lined my baking dish with parchment paper. I poured in the mixture and sent it to the oven at 170 degrees. I decorated the top with sunflower seeds and pumpkin seeds. Believe me, it was so delicious! I made it at midnight, I could hardly wait until morning to eat it…
It’s very filling because it’s rich in fiber and protein, and it’s super tasty too. You already know how lovely the combination of sautéed leeks and carrots with eggs is. And the beetroot and spinach added the finishing touch.
This is my breakfast for the next three days.
