Sebze Köfte

I suddenly felt like making one of my favorite dishes: vegetable patties.

I’m going to go shopping now and make these little cuties again. They’re delicious.

– I thinly sliced ​​2 leeks.

– I grated 2 carrots and sautéed them with the leeks in a pan with olive oil over low heat.

– Once sautéed, I transferred them to a glass bowl. In the same pan, I sautéed finely chopped Swiss chard. Just 1-2 minutes, until wilted. I added the Swiss chard to the mixture.

– Before starting with the vegetables, I put 1/2 cup of quinoa in a pot with the same amount of water and boiled it. I left it al dente. You can use any grain, legume, or flour you like.

– I added 2 eggs and the boiled quinoa to the vegetables in the bowl. Lots of vegetables, little egg and quinoa.

– First, I fried them in the shape of patties using a spoon. It turned out great, but I realized I didn’t have time to make them individually, so I poured them all into a baking dish. They baked at 170 degrees Celsius for 25-30 minutes. You can bake them whichever way you prefer. I’ve included photos of each stage.
