
Yesterday I made chickpea patties, and they turned out great! They were so delicious and filling that I immediately thought they had to be on my blog 🙂 Next to them was the baked imam bayildi (stuffed eggplant dish). I’ll post a picture of that here too when I take another one. Together, they made a fantastic lunch for me.
Ingredients and instructions:
* I processed 2 cups of boiled chickpeas in a food processor until they were like flour. I didn’t grind them to the consistency of hummus. I’ve included a photo below.

* 2 eggs
* 3 sprigs of fresh spring onions
* 1 grated carrot
* A variety of spices 😊 cumin, turmeric, salt, black pepper, lemon pepper, garam masala (Indian spice mix, I bought it abroad but it’s available in supermarkets here too)
I kneaded everything together. The dough is a bit crumbly. Adding flour would help it hold together better, but I didn’t want to add any to maintain its gluten-free nature. I kneaded it well and shaped it with my oiled hands. I got about 20 pieces.
* I fried them in a pan with 1 teaspoon of clarified butter.

I put the rest in the refrigerator. You can make more and freeze it. It’s incredibly delicious and filling 😍
