These balls are the perfect energy boost. They’ll be a lifesaver when you need strength, like before a workout, a long meeting, or while preparing for an exam. They only take 2 minutes to make, which I think is their best feature 🙂
Ingredients:
- 2 handfuls of walnuts
- 2 handfuls of almonds
- 2 handfuls of cashews
- 1 tablespoon of cashew butter (if you don’t have cashew butter, any sugar-free spread will do)
- 2 diced dried apricots
- 2 tablespoons of carob extract (if you don’t have it, honey or molasses will do)

Put all the ingredients in a food processor and blend until it reaches a dough-like consistency.

It takes about a minute to reach this shape. We remove the dough from the food processor, form it into balls with our hands, coat them in coconut flour, and let them sit in the refrigerator for an hour.
They tasted very different, like wafers. I loved them.
