
You know how sometimes I say, “Please make this,” well, this is one of those 🙂
It gave me a zucchini bulgur pilaf or pasta vibe 🙂
– I sliced a dry onion into rings and sautéed it in olive oil in a pot.
– I added 1 tablespoon of tomato paste.
– Then I cut 2 medium-sized zucchinis into small pieces and added them. I covered the pot. They released some of their water and sautéed.
– I added 4 tablespoons of oatmeal and 1/2 cup of water.
– As you know, oatmeal only cooks in 2 minutes. It absorbed the water immediately. I added salt and turned off the heat.
While it was still hot, I added 2 tablespoons of yogurt and olive oil with chili peppers on top. It was absolutely delicious. It gave me the feeling of a real bulgur pilaf. I used to be in love with bulgur pilaf with onions and tomatoes. 🙈
Instead of oatmeal, you can use rice, quinoa, pre-boiled lentils, or even fine bulgur if you don’t have gluten issues. Oatmeal cooks very quickly; the others, except for fine bulgur, take a little longer, and you’ll need to add more water.
