Summer Rice Pilaf 😍 Good morning :))) Rice is something we cook a lot of in our family. I don’t eat it much myself, but I make it for my husband often. It gets boring when you always make it like pilaf. This way, it’s a really great option.

If I remember correctly, when I was little, my parents used to make something called Summer Pilaf for gatherings. With peas, carrots, and so on. I’m inspired by that. When there are more vegetables, there’s less rice 😀

🌸 I cooked brown/hulled rice like pilaf, but without oil, letting it absorb the water. It cooks with a 1:2 ratio of water.

🌸 At the same time, I grilled thinly sliced ​​zucchini in a toaster oven. You can also cook it in the oven or pan if you prefer. Once cooked, I cut it into cubes.

🌸 I chopped the tomatoes into tiny pieces.

🌸 I put everything in a bowl and mixed it. Fresh onions would also be a great addition, but I ran out.

I added olive oil, lemon juice, sumac, and finally dill.

It turned out so, so delicious. I hadn’t taken photos of the steps because I never intended to share it. But when I tasted it, I loved it so much that I thought, “What steps are there anyway? Just take a picture and share!” And ta-da! Here it is.

We don’t use white rice here. We use Karacadağ rice with the husk or Turkish-origin brown/brown rice from large supermarkets. I don’t use refined white rice because it has a high glycemic index, raises blood sugar quickly, and is far from its natural state, but of course, those who want can make it with white rice 🙂

My opinions on basmati rice:

I’m against everything white, except cabbage/cauliflower 😂 There’s practically no basmati rice with the husk in our country. There are only 1-2 companies that have it. If you can find basmati rice with the husk, great, but most of it is white basmati, and I can’t understand why white basmati is marketed as healthy. That’s my opinion. The data speaks for itself. It has a lower glycemic index than other white rice varieties, but it’s still high.
