
My absolute favorite way to eat artichokes 😍
I made open-faced stuffed artichokes with olive oil, it’s completely improvised but it turned out amazing.
Please try this because it’s incredibly delicious. I’m sure you’ll love it.
-If you don’t have quinoa, you can use brown rice too. I cooked 4 artichokes in a large pan or pot with a little olive oil and water.
-I cooked them until the water was absorbed. While the artichokes were cooking, I sautéed 1 onion in another pot. I added 1/2 cup of quinoa, the juice of 1 sweet mandarin orange, 1/2 cup of hot water (it should be 1 cup of water for every 1/2 cup of quinoa).
-I mixed the mandarin juice with the boiled water to get 1 cup of liquid), some currants, some pine nuts, a very small amount of salt, and a very small amount of cinnamon.
-I cooked it until the water was absorbed. Since I didn’t use sugar, I got that olive oil sweetness from the mandarin.
-After it cooked, I turned off the heat and let it cool so the quinoa grains would stay separate. Then I spooned this amazing pilaf into the artichokes. This filling fills 6 large artichokes. Absolutely fantastic! 👌🏻
