
Now that we’re from Urla, shouldn’t we have some Çalkama (a type of Turkish soup)? I used to make it with chard without knowing any better. You all always said, “Ms. Sema, this is the real Çalkama!” I made it instinctively. After moving here, I ate real Çalkama for the first time. It’s incredibly delicious. I even made a healthier version myself.
🍁 1 cup flour – Any flour will do.
I mixed buckwheat and chickpea flour. I love the combination of these two.
🍁 1.25 cups water – Chickpea flour absorbs a bit more water. You might need to reduce the water if you use other flours. I recommend adding water gradually, checking the consistency in the video. If it’s too thick, add water; if it’s too runny, add more flour 🙂
🍁 A little salt
🍁 Mixed greens. I bought mixed herbs from the market. Spinach, chard, beet stalks, thinly sliced leeks. You can mix all of these together, or use just one or two.
🍁 Olive oil for cooking
🍁 Sesame seeds for sprinkling on top
🍁 Pan, 28 cm diameter

I cooked the bottom on the stovetop first and then immediately put it on the grill. It was quick. If you prefer, you can also cook it entirely in the oven.
Some people add eggs or cheese to the filling. I think they’re all delicious. I made it in its simplest form.
