
I combined Urla’s bulgur-based raw stuffed vine leaves with the Bat dish I heard about from you all. The result was an incredibly delicious dish.
Raw Stuffed Vine Leaves
🌸 Vine leaves
🌸 1/2 cup quinoa
🌸 3/4 cup water
🌸 1 teaspoon tomato paste
🌸 2 tablespoons grated tomatoes (cooked, canned from winter)
🌸 Fresh onions and dill
🌸 Olive oil
🌸 1/2 lemon
I blanched the fresh leaves briefly. To prepare the filling, I boiled the quinoa in water. Rice would also work. I boiled mung beans (by eye). Green lentils would also work.
In a bowl, I diluted the tomato paste and canned grated tomatoes with a little water. It will be quite runny. I added a sprig of fresh onion and dill. I added the lemon and olive oil, then the cooked quinoa and mung beans. I added plenty of sumac last. Even as it was, the filling was delicious. You can add mint, dill, walnuts, and a little pomegranate molasses according to your taste.
Then I wrapped it in vine leaves and ate it. Those who have pickled vine leaves can soak them in a little water, cook them briefly, and wrap them the same way.
