Kinoa Ezmeli Mutluluk Keki :)

Look how I came up with a name for my cake 🙂 But how could anyone be unhappy starting a Monday morning with this cake? The culprit is the small tart tin I bought from the market last night. I bought it thinking I’d bake something in it, and I jumped out of bed this morning dreaming of making this cake. It took 2 minutes to prepare and 25 minutes to bake. It was ready by the time I showered and got dressed.

Ingredients:

* 3 tablespoons quinoa flakes (my instructions for this flake are below) you can get them from here.

* 1 egg

* 1/2 mashed banana. If you prefer it sweeter, you can add a whole banana. Just make sure it cooks perfectly inside.

* 1 tablespoon coconut oil, butter can also be used

* A pinch of baking powder or baking soda

* Cinnamon to taste, I used plenty 🙂

* I took some blueberries out of the freezer to decorate the top. I love the taste of blueberries when they’re cooked. You can omit any fruit if you prefer. You can also add apple or peach slices. It’s up to you and the ingredients you have at home.

I mixed everything together and poured it into a single-serving tart tin. The tin is about the size of my hand. Then I baked it in a preheated oven at 175 degrees Celsius for 25 minutes.

If you ask, “Sema, why did you use quinoa paste?”… You know I love quinoa. It has excellent nutritional value and keeps you feeling full for a long time. However, quinoa should always be cooked before use. Quinoa paste doesn’t need to be pre-cooked. You can even add it directly to milk or yogurt. You can use it directly in recipes like oatmeal. If it weren’t a paste, I would have had to cook the quinoa before using it in this recipe, which takes extra time.

If you don’t have quinoa flakes, oatmeal will also work. It’s delicious that way too. You can find the recipe here.

I enjoyed this wonderful cake with a cup of tea on Monday morning.

The inside is also incredibly soft.

I took the first bite and exclaimed, “Oh my God, what is this? It’s amazing!” and stopped filming 🙂
