
These pastries turned out so delicious! I’m saying, let the pastries do the talking! I want to eat them right now, but I’m a master at waiting for morning with my mouth watering.
Lately, I’ve been getting sick of eating eggs for breakfast. I was looking for something different, and these wonderful little balls came out of it.
Gluten-free, protein-rich little balls that don’t cause heartburn or bloating.
Ingredients
* 1/2 cup quinoa flour (I had bought quinoa flour from the supermarket before, but it tasted so bad I threw it all away. It had a raw taste. My sweet friend Hale on Instagram recommended Güzel Gıda’s, and I loved it. Naturelka’s is also fantastic)
* 1/2 cup dried bean flour

* 1 egg (yolk for brushing on the outside, white for the inside)
* 1/2 packet baking powder
* 2 matchbox-sized pieces of grated hard cheese. I used İzmir tulum cheese, but aged kashar or lor cheese would also work.
* 3/4 cup yogurt whey (you know homemade yogurt releases water, I always save that. I used this whey, but you can use the same amount of milk or yogurt)
* Sesame seeds and poppy seeds for garnish
I mixed everything together and kneaded. The consistency was a soft dough that was slightly sticky to the touch. I greased my hands and made round balls. I brushed them with egg yolk and decorated them. Everything took 5 minutes. I placed them on a baking sheet lined with parchment paper and baked them in a 175-degree Celsius convection oven for 30 minutes.

I have almost a week’s worth of breakfast ready. It made 12 pastries. They really only take 5 minutes to make. If you put two in your bag every morning on your way to work, you’ll have a healthy breakfast with you everywhere. You won’t have to eat those pastries made with white flour and margarine outside.

Recipe note: Both quinoa and dried beans are high in plant-based protein, so they will keep you feeling full for a long time.
