One morning I woke up craving bread, pastries, and buns.

When that happens, I turn to potatoes, my most innocent and favorite carbohydrate. Potatoes have a bad reputation because of their starch content, but there are people who separate the potatoes from their pea stew and then go eat cake instead. When eaten in moderation and cooked correctly, potatoes aren’t something to be avoided like a bogeyman unless you have a specific health condition. I love potatoes 🥔 They’re high in fiber and Vitamin C. I eat them about once a month. A generation got sick because they ate packaged foods, high sugar, and highly processed grains, not because they ate potatoes. Let’s keep that information in mind 🙂

– 2 eggs

– 1 medium-sized grated raw potato (I squeezed out the water by hand)

– 2 handfuls of spinach or chard, seasoned with salt (it softens and cooks very quickly), but it’s optional.

I mixed everything together. I lined my favorite toaster oven with parchment paper. The pictures are on the side. My toaster oven has a height adjustment. I cooked it without pressing down too hard. However, this same mixture can also be poured into a baking dish or single-serving muffin tins and baked at 170 degrees Celsius. It tastes amazing that way, but I didn’t have time. I made it quickly like this. I think you should make it for your morning treat 🙂 Those who want can add cheese or other spices. Sun-dried tomatoes, thyme, etc. would also work. Babies 👶 and even older babies love this. 👨
