This morning, this recipe received a lot of attention on my Instagram account. So, I thought it deserved to be on the blog too 🙂
I want to tell you about a wonderful omelet pizza for the weekend. It’s truly one of the best ways to brighten up your breakfast table with health and deliciousness 😊 It’s one of my favorites. I enjoyed it so much after my workout, I can’t even describe it 😋 I wanted to write it down right away in case you might want to make it this beautiful Saturday morning. It’s very, very simple.
🍁 I whisked 2 eggs with 2 tablespoons of oatmeal that I had processed in a food processor. I cooked the bottom in a pan with clarified butter (you can find the recipe and its benefits here). I flipped the top side for only 2 seconds, just enough to remove the moisture. The base was ready.
🍁 I transferred the omelet base to a baking sheet lined with parchment paper. Actually, it’s even more practical if you cook it in an oven-safe pan. You can transfer it directly to the oven with the pan. I spread tomato paste on top.

🍁 I added sliced cheese, tomatoes, and olives. Your pizza toppings are up to your imagination, anything works 🙂
🍁 I turned on the grill function of the oven. I grilled it until the cheese melted, which was a total of 2-3 minutes, and ta-daaa, the amazing omelet pizza was ready. We ate it together with the little one below. At first he was sleeping, but then he came to my side when he smelled it 🐶

I have a workshop tomorrow! I’m so excited to see you all. Today I’ll finish the last-minute shopping and then relax a lot this evening. I love sharing stories, cooking, and feeding you all 😀 This workshop is fully booked, but we still have spots for my workshop on October 28th. If you’d like to come, we can see you there. I wish everyone a wonderful weekend.
