You always asked me, “Can oatmeal pie be baked in the oven?” I always made it in a pan like pancakes. This time, I was going to make a lot, and I thought it would take too long in the pan, so I decided to bake it. Then I added a little bit of this and a little bit of that, and the result was something amazing. Oatmeal pie grew, it became a big sister! Oatmeal pie lovers will adore this. If you’ve never tried it before, you can try this version directly.

4 eggs
6 tbsp gluten-free oatmeal
2-3 tbsp sunflower seeds
2 handfuls of walnuts
1 small piece of goat cheese
4 tbsp olive oil
3-4 small diced sun-dried tomatoes
Salt and 1 tsp baking powder

I ground the oatmeal, sunflower seeds, and walnuts in a food processor. It doesn’t become like flour, it breaks into small pieces. I mixed it with the beaten eggs. I added all the other ingredients. I waited 10 minutes for the oatmeal to absorb the liquids. Then I poured it into a baking dish. It baked in a 170-degree fan-assisted oven in less than 30 minutes. I insert the knife, and when it comes out dry, it’s done.

It was amazing with breakfast salad and tea. You can see the inside at the end. It’s bubbly, soft inside, crispy outside, wonderful. 🙂

I think a little rubbed chard or spinach, sautéed leeks or carrots would also go incredibly well with it.

You’ll see and hear in the video that there were 2 tablespoons of sprouted lentils. I added them so they wouldn’t be left over. It’s optional.

Note: I haven’t tried anything else instead of eggs and oatmeal. These are the main ingredients. I’m leaving the idea to you. You can experiment as you wish 🤗
