
One of my absolute favorite cookies, another one of my prized possessions. I’ve described it many times on my Instagram account, but I wanted to share it on my blog too. These cookies are made in 5 minutes, and their aroma fills the entire apartment building. I made these cookies recently. When my husband came home from work in the evening, he smelled them from the building’s entrance (we live on the 8th floor, by the way), and he came all the way home sniffing, thinking Sema must have made them! Anyone who doesn’t try these will regret it…

Ingredients:
• 8 tablespoons rolled oats (processed in a food processor)
• 2 handfuls of raw hazelnuts (processed in a food processor but left coarsely chopped)
• 1 handful of raisins (cut into smaller pieces with a knife before adding)
• 3 dried apricots (soaked in boiling water and then processed in a food processor)
• Plenty of cinnamon
• Grated nutmeg (optional)
• 3 tablespoons of 100% unsweetened, additive-free peanut butter (tahini can be used instead, but a source of fat is essential. It makes it crispy).
• About half a cup of water (add gradually, checking the consistency; it shouldn’t be too runny).

The consistency becomes like mud. Mix all the ingredients together. There’s nothing in the mixture to hold the ingredients together, but shape them by spooning them onto a baking sheet lined with parchment paper. All the ingredients will stick together.
Bake at 175 degrees Celsius for about 30 minutes. They turn out to be crispy, wonderfully fragrant cookies… In my opinion, they’re one of the best things to have with coffee or afternoon tea 🙂
