These muffins were also among the stars of the week and, of course, they’re taking their place on the blog 🙂 Many people tried them again. And so, the breakfast chore for a whole weekday is over. They only take 5 minutes to make 🙂 I don’t really have much time to spend on lengthy recipes anyway. All the recipes you see on this blog take a maximum of 15 minutes to prepare 🙂
This is actually a mixture I make often, but this time I added a twist. It took the flavor to a completely different level.
Ingredients:
9 tablespoons rolled oats
2 eggs
250 gr cottage cheese
1/2 cup milk
1 tablespoon cream (this is the amazing addition :))
a pinch of salt, a pinch of baking soda or baking powder
I mixed everything together. I waited 30 minutes for the oats to absorb the liquids. The oats absorbed the liquids and became a solid mixture. I put 1-1.5 tablespoons into each muffin tin. I decorated them with sunflower seeds and sesame seeds. I baked them in a 170-degree oven for about 30 minutes. If a toothpick or knife inserted into the center comes out clean, your muffins are done.
You can also make them in loaf pans instead of muffin tins. Then you can slice them like bread and enjoy them with tea 🙂
