
I’ve come to you with a wonderful recipe; mushroom quinoa pilaf, or risotto. 🙈
I love oyster mushrooms. I don’t like button mushrooms at all. When I used to live in China (15 years ago), I ate so many different kinds of mushrooms that now button mushrooms just don’t satisfy me. Oyster mushrooms are a closer and more delicious taste.
-I chopped 3 oyster mushrooms. I briefly sautéed them in a pan with 1/2 a dry onion and clarified butter.
-I added 4 tablespoons of washed quinoa and covered it. As the mushrooms released their water, the quinoa absorbed it. Oh, I can’t even describe how delicious it was.
-When the water was absorbed, the quinoa wasn’t cooked. I added a little boiling water and covered it again. It simmered on low heat until the water was absorbed and it was cooked.
-I added salt and covered it, but if you add some cream (I don’t recommend it, but it might be a Corona treat 😜) and some grated hard cheese, there you have it, a healthy risotto or 1 teaspoon of cream cheese.
