
Here’s another delicious recipe that doesn’t leak, doesn’t spoil in your bag, and is very filling. I never used to eat out, and now I don’t eat out at all. These kinds of meals are very convenient to carry around for a long time. I ate it for 3 days, I’d say 🙈
I love using mung beans because they’re a legume that doesn’t cause gas, or causes less gas compared to others. In fact, according to some sources, they’re not even a legume; they’re considered a vegetable. They cook quickly, taste great, are filling, and nutritious.
I boiled the mung beans in salted water. At the same time, I boiled baby, fresh potatoes with their skins on. Potatoes aren’t a monster vegetable for me. When eaten correctly, they’re very beneficial. When boiled and consumed cold, their glycemic index is much lower. They don’t upset my sugar balance. I can’t understand why I eat bread, cereals, and sweets but not potatoes, anyway 🙂
I mixed the boiled mung beans with the potatoes. I had an orange at home. To avoid spoilage, I squeezed the juice from half of it and mixed it with olive oil. I poured it over the salad. And finally, I added sumac. It was so delicious!
These days, when we’re carrying more food, mixing and dressing legumes with vegetables is a great solution. It can also be mixed with baked zucchini or eggplant. Since it doesn’t contain any animal products, it doesn’t spoil, and it’s very filling.
