Maş Fasulyesi Ekmeği

Here’s the recipe for my delicious mung bean bread!

3/4 cup mung beans, soaked overnight. After swollen, they made 2 cups.

I added 1 cup of water and blended them in a food processor.

It was a bit runny, so I added 3 tablespoons of ground flax seeds. You can use any flour you like instead of flax seeds. The consistency is shown below. You can adjust it according to your preference.

If you don’t want to add flour, you can use 1/2 cup of water instead. We always come up with solutions! 🙂

I added 2 tablespoons of olive paste. It’s not mandatory, of course. I added it to use up some at home, and it went very well with it.

2 tablespoons of olive oil, salt, and cumin. You can use any spices you like.

1/2 teaspoon of baking soda, I frothed it with 2-3 drops of lemon juice. 1/2 teaspoon of baking powder would also work.

I poured the mixture into a baking dish. I think this dish is about 15-16 cm long. I decorated it with sesame seeds. I baked it in a convection/fan oven at 160 degrees until cooked through (I think 35-40 minutes).

It tasted really good and was also very filling. It lasted us for 3 days.

     

Let’s soak the lentils. The same recipe works with red or yellow lentils. Thyme and sun-dried tomatoes also go very well with it.
