
This isn’t my first recipe with mung beans, but I don’t think it will be my last. They all turn out delicious and practical.
🎄 1 cup mung beans (accidentally overcooked) – 4 cups cooked and mushy. Before cooking, it was about 1 cup. I lightly mashed these mung beans with a fork. If you blend them, they become watery and the inside remains moist.
🎄 2 beaten eggs
🎄 3 tablespoons corn flour (any flour will do)
🎄 6 tablespoons olive oil
🎄 1/4 cup water and a pinch of salt
🎄 2 handfuls of finely chopped walnuts
I mixed everything together. The consistency is shown in the link below. If it’s too runny, add flour; if it’s too thick, add liquid to find the right consistency. I spread the batter into a baking pan. It’s important to thin it out. If it’s baked in a cake pan, the inside will remain moist. If the pre-boiled legumes are too thick, the inside won’t cook properly. It’s proven by experience, I’ve tried it countless times! 🙂 I spread it on the tray about 1 cm thick. It baked in a 170-degree turbo oven for about 35 minutes. I didn’t add any spices, but I think cumin or something similar would have been a great addition. It turned out to be both filling and very delicious. A sibling to Mash Lavash, now we have Mash Pide! 🎉
