Mercimek Krakeri

Today I made a super simple, no-bake, incredibly delicious cracker. I made a small batch to try it out; if I had known, I would have made double the amount. Since these crackers are gone in 5 minutes, I recommend making two or three times the amount below. It sounds long when written, but it’s very easy to make.

Ingredients:

1/2 cup red lentils
1/4 cup water
2 tablespoons olive oil
Salt, cumin, coriander

For frying: Coconut oil, clarified butter (recipe in this link), or any oil you prefer

I ground the red lentils in a coffee grinder. They turned into flour immediately. While grinding, I also added whole cumin and coriander seeds and ground them together, but you can use the spices in powder form if you prefer.

I use my coffee grinder a lot. I bought one once and I use it to the fullest. It’s ideal for grinding spices and turning seeds into flour at home.

Using half the amount of water as the lentils you add helps you get a nice dough. I added the oil, water, and salt, and my dough was ready in no time. It’s a soft dough that doesn’t stick to your hands.

I put on a glove and moistened it so it wouldn’t stick. I shaped the mixture into thin, round pieces like the ones below and dropped them into a pan that was preheated on the stove. I melted 1.5 tablespoons of coconut oil in the pan beforehand.

I cooked them on both sides. They don’t absorb much oil, but I still took them out and placed them on a paper towel.

It yielded 7 pieces, each smaller than a teacup saucer, and 4 of them were gone instantly :)) I highly recommend you try it.

I thought, my followers will definitely ask, “Sema Hanım, can we make it with chickpea flour?” 🙂 Since all the ingredients were around and there was oil in the pan, I decided to try it with chickpea flour. It’s best eaten hot. I had three left, so I put them in a storage container. I tasted them in the afternoon, and they were still delicious. They weren’t as crispy as they were initially, but they were still fantastic.
