Pırasa Böreği

I don’t really like eating leeks as a dish, but they’re so healthy. This week I bought 1 kilo of leeks from the market, and of course, this delicious dish was on my mind. I made it every week last winter, we did…

1 kilo of leeks, very finely chopped
2-3 grated carrots
6 eggs
3 tablespoons corn flour (any flour will do)

I sauté the leeks and carrots in olive oil with a little salt. When the leeks wilt and soften, I turn off the heat. I add the flour to the beaten eggs and mix it with the lukewarm vegetables. Then I pour everything into a baking dish lined with parchment paper. Finally, I add pieces of clarified butter or regular butter on top. I sprinkle with nigella seeds and bake in a 170-degree convection oven. I think it takes about 30 minutes.

Even those who don’t like leeks or eggs will absolutely love this. I can’t even begin to describe how delicious it is. Served with yogurt, it will be my lunch tomorrow.

Note: Some people ask if 6 eggs is too much, so I’d like to explain. I used 6 eggs for 1 kilo of leeks and 2-3 carrots, almost 1.3 kilos of vegetables in total. It filled a huge baking dish. If you use half a kilo of vegetables, you can use 3 eggs. That way, it won’t be too many eggs 🙂
