These cookies turned out really delicious. Believe me, they taste just like regular cookies. They’re perfect for kids’ lunchboxes, office drawers, or tea time at home.

🌸 5 tbsp red lentil flour

🌸 5 tbsp brown rice flour

🌸 1/2 cup olive oil

🌸 1/4 cup water

🌸 1 egg white (into the dough), yolk (for brushing on top)

🌸 1/2 tsp mahlep (optional)

🌸 Salt and the vegetable powder mixture from the link (any spice mix will work)

🌸 1 tsp baking powder

This was the easiest dough I’ve ever shaped. It’s my first time using rice flour. It’s very delicious and very easy to shape. You can see the consistency and how it takes shape in the link below. I kneaded it and shaped it into various forms. After shaping, I brushed the tops with egg yolk and decorated them with nigella seeds and sesame seeds. Believe it or not, I timed it in the oven for the first time ever! 😀 It cooked in exactly 30 minutes in the preheated 180-degree turbo oven.

You can change the consistency as you like, while staying true to the recipe. Mine deviated a bit from the lentil pilaf concept. You know how it keeps you full? I used that, and it turned out both delicious and filling 😀
