
This is, in my opinion, the best healthy pizza I’ve ever made or tried. No dough, no flour, no starch, no yeast, no eggs, no kneading, no gluten, but it’s crispy…
I can’t even begin to tell you how simple it is. All you need to do is soak the quinoa in water for 8 hours.
I soaked half a cup of quinoa (I can’t give an alternative for this recipe, I only tried it with quinoa) in cold water for 8 hours. Then I drained it and blended it in a food processor with 2 tablespoons of water, 1 tablespoon of olive oil, salt, thyme, and red pepper. You need to blend it for a while. After 3-4 minutes, it becomes the consistency of a crepe.
I poured the mixture into a 20 cm diameter round baking pan lined with parchment paper. It baked at 200 degrees for 20 minutes. Once the bottom was cooked, I topped it with tomato sauce (1 teaspoon of tomato paste diluted with water), grated cheese, olives, and thyme, and baked it again. The toppings are limitless. You can add whatever you like. If you don’t add cheese, it could even be a vegan pizza.
The quinoa is so crunchy when you eat it. I made this years ago. I still make it occasionally. I’ve even made extra base, baked it, and frozen it. When I want it, I just take it out, thaw it, add the toppings, and bake it for 2 minutes. It’s very practical.
