
One of my favorite things in the world is lentil patties, but I used to get incredibly bloated after eating them. I made a gluten-free, bulgur-free version. Believe me, it really didn’t disappoint compared to the original…
1 cup red lentils (I fermented them in water with 1 tablespoon of yogurt for 24 hours to further reduce the possibility of gas)
1/2 cup quinoa – washed 2-3 times
Approximately 2 cups of water
I put everything in a pot, added a little salt, and left it to cook. It’s cooked when all the water is absorbed. However, since I soaked the lentils in water for 24 hours, they cooked faster. If you don’t soak them, you may need to increase the amount of boiling water a little.
Once the water was absorbed, I covered it and let it rest for a while.
At the same time, I sautéed 1 dry onion in plenty of olive oil in a pan. I added 1 tablespoon of tomato paste and 1 teaspoon of hot pepper paste to the lentil mixture.
I added it to the lentil mixture and kneaded it well. I also added plenty of parsley and dill.
Finally, I added plenty of sumac and half a lemon juice. I really like my lentil patties sour. You can omit the lemon if you prefer.
No bloating, just amazing flavor 🙂
