
Run, run, I made flour halva!
I think it’s been 20 years since I’ve eaten flour halva. This is a request! My friend recently said, “Oh Semooooş, could you make a healthier version of halva so we can eat it?” She even threw her ingredients at me late at night. I said it wouldn’t work with those. I promised I’d try, and it worked on the first try, and wow, it turned out amazing! 💃🏼
– 3 tablespoons chickpea flour
– 3 tablespoons coconut flour
– 2 tablespoons mulberry flour (I made a puree by adding hot water as shown in the photo) You can also achieve the same result by blending dried mulberries in a food processor and adding hot water. You can also make the same puree by soaking 5 dates in hot water and blending them in a food processor.
– Enough hot water to fill the glass I have, olive oil and clarified butter (butter or just olive oil will also work) for sautéing the flours
It’s so simple!
I melted a mixture of olive oil and clarified butter in a saucepan. I added olive oil and 1 teaspoon of clarified butter, just like I would for a salad. I sautéed the flour over low heat, stirring constantly. Then, I filled the glass in the photo to the brim with hot water and added it to the pan. It absorbed the water immediately and was ready.

Pine nuts are 600 TL per kilo, so I don’t have any at home anymore. I couldn’t think of anything else to add, but crushed hazelnuts or something similar would have been a great addition. I was so excited that I didn’t think too much and wanted to share it with you right away.
Lately, I’ve been hearing from both people around me and my clients that family members want dessert in the evenings. I wish you wouldn’t eat it in the evenings, but if you absolutely have to, at least try these healthy versions, so I wanted to share it quickly.
Note 1: I like very little sweetness. This suits my taste, but those who like sweets can increase the amount of mulberries to 4 tablespoons.
Note 2: I haven’t tried it with other flours. I just tried this spontaneously. I honestly don’t know if the consistency and taste would change with other flours. If you try it, please let me know by writing under this post.
