Tok Tutan Muffin

I’m out all day, so I made this muffin 😊 or protein muffin.

I made this last night at 11 pm, it only takes 5 minutes to prepare. I make it often, but this time it was amazing. Why is it called “filling”? Because it doesn’t contain grains, it’s high in fat and nuts. Guaranteed to keep you full for hours.

– 2 eggs
– 2 tablespoons yogurt
– 3 tablespoons cottage cheese
– 5 tablespoons almond flour (you can get this by grinding almonds, hazelnuts, or any seeds you like in a food processor) This is the trick. Any flour will work, but I use nut flour because it’s low in carbohydrates and keeps you full longer.
– Now for the highlight. This is what made it taste amazing. I added 1 teaspoon of dried basil. Oh my god, I’m speechless 😋 I would have added sun-dried tomatoes too, but I didn’t have any. If you have them, add them, they go incredibly well with it. – 1/2 teaspoon baking soda

I mixed everything together and poured it into muffin cups. They baked at 150 degrees Celsius for about 30 minutes. We don’t raise the baking temperature above 150 degrees to avoid damaging the healthy fats in the nuts. The lower, the better.
This yielded 7 muffins. They were absolutely amazing! Please try them! 😍
