
These pastry bites turned out delicious and, like all low-carb recipes, they’re very filling.
🌸 1 cup cooked chickpeas
🌸 6 tablespoons olive oil
🌸 3 tablespoons yogurt
🌸 3 tablespoons water
🌸 1 egg white (I set aside the yolk for brushing on top)
🌸 1 heaping cup buckwheat flour
🌸 A small piece of cheese
🌸 1 teaspoon baking powder
I blended all the ingredients except the flour, cheese, and baking powder in a blender. It became a runny mixture. I added 1 teaspoon of baking powder. I added the buckwheat flour. I had a tiny piece of cheese, which I grated. You can make them without cheese, with olives, sun-dried tomatoes, or plain if you prefer. I shaped them with wet hands. I brushed the tops with egg yolk and sprinkled some sesame seeds.
They baked in a preheated convection oven at 170 degrees Celsius for about 25 minutes. I didn’t time it, so please be sure to observe the baking time. After turning it off, I left it in the oven for a while, still warm.
