
I named this cookie “Chickpea and Raisin Cookie” because the combination of chickpeas and raisins is wonderful. It contains no flour or grains! 😀
– 2 tablespoons peanut butter
– 1.5 handfuls of finely chopped raisins
– 3 handfuls of salted roasted chickpeas
– 2 handfuls of hazelnuts
– 1/2 cup minus one finger’s width of water
– 1 teaspoon cocoa, cinnamon, ginger, carob flour (optional)
– 1 tablespoon of your preferred flour. If you don’t want to add any, you can omit it and increase the amount of chickpeas by one handful.
I ground the chickpeas and hazelnuts in a hand food processor, not until they were too finely ground, but still small. Then I mixed all the ingredients and kneaded the dough. I baked them in the oven at 160 degrees. By the way, they tasted amazing raw too. You can also make balls and serve them coated in just dried coconut.
If you like sweet and salty flavors together, you’ll love this. If you don’t want to mix salty and sweet, you can use regular yellow chickpeas instead of salted ones.
Note: You can change the ingredients as you like. Almond paste, tahini, walnuts instead of hazelnuts, almonds or other dried fruit instead of raisins. It’s up to you, but I think it’s super as it is 😀
