
Look what cauliflower has become! 🙂 It’s become popcorn, tabbouleh, dumplings, rice, pizza… Let’s see what else we’ll witness 🙂
For the base:

1 cup of cauliflower, finely chopped using a food processor
1 egg
1 tablespoon ground flax seeds
2 tablespoons cornstarch and a pinch of salt

I mixed all the ingredients together. It doesn’t become like dough. It’s lumpy and very prone to falling apart.

I moistened my hands and spread the mixture onto the bottom of an 18 cm diameter tart tin lined with parchment paper. I pressed it down with my palm to give it shape.

I baked it in the oven at 170 degrees for 25 minutes. Actually, it would have been much quicker in a pan, but I preferred the oven because of the risk of it falling apart. This is what it looks like after it came out of the oven.
I made a sauce by diluting tomato paste with a little water in a bowl. I spread this sauce on the base. Then I added pastrami, aged cheddar cheese, and black olives on top. I put it back in the oven for a very short time until the top was cooked, and my pizza was ready. I added oregano and ate it with great pleasure.
Normally, vegetable pizzas are very soft. This one wasn’t. It’s quite easy to hold by hand. You can see the texture of the inside here.

Of course, but it’s important to remember that ultimately, the base is cauliflower. We’re happy to call it pizza 🙂 You won’t find the real pizza taste in it, but you’ll discover a delightful aspect of eating vegetables 🙂 You’ll fill your stomach deliciously with low carbohydrates… I also make this with zucchini in the summer, and it’s very good.
