* 2 cups broccoli, processed in a food processor until it’s like bulgur

* 2 cups cauliflower, processed in a food processor until it’s like bulgur

* 1 egg

* 4 tablespoons spelt flour. I didn’t dare try it with gluten-free flours. I couldn’t bear to waste my organic cauliflower and broccoli. I needed a flour that would hold them together. Whole wheat or processed oatmeal would also work, but I’m not entirely sure if gluten-free flours would hold the ingredients together. If anyone makes it, could they let me know?

* 1 clove of crushed garlic

* Salt, pepper, a pinch of turmeric, cumin

I mixed everything together. I kneaded it. I dipped my hands in olive oil, shaped it, and cooked it on both sides in a pan with clarified butter after the pan heated up and the heat was reduced. I never imagined it could be this delicious.

I think you could also add grated carrots and fresh onions. It just occurred to me. Instead of flour, 1 medium-sized boiled potato would also help bind the ingredients together. A gluten-free version would be like this…
