
You asked me for so many custard and pudding recipes that I accidentally made one, and it turned out amazing!
-1 cup milk/plant-based milk (Recipe in this post)
-2 tablespoons dried coconut (the kind used in cakes)
-1 tablespoon coconut flour, or 2 tablespoons oatmeal or any flour you like. -2 local bananas
-Tahini or any spread you like for topping
I heated the milk, added the flour and dried coconut. You can check my Instagram post for the consistency.
I cooked it for 2 minutes. Then I mashed 2 local bananas. I stirred it lightly and turned off the heat. You can find the consistency after adding the bananas in the post.
I poured it into bowls. I added 1 tablespoon of tahini on top and, since I had granola at home, I sprinkled some granola on top. Chopped hazelnuts and raisins would also be great. It’s optional though. Don’t say I didn’t warn you, you’ll absolutely love this! By the way, it was even better the next day. You can use this as a base for starch-free custard or pudding, and you can also make chocolate, cinnamon, etc. versions depending on the ingredients you have at home.
