
For dinner, we had green beans and okra stew at home. Although I love both, for some reason I didn’t feel like eating them. What I really wanted was a cake to go with my tea. The kitchen was so hot, and if I turned on the oven, we might have turned to steam. So I immediately made a pancake. I completely improvised, but it turned out amazing. Please, please try it! 😍 It’s the most innocent way to satisfy your sweet tooth.

Ingredients:
🌸 2 beaten eggs
🌸 1 heaping tablespoon coconut flour
🌸 1/2 cup plant-based or regular milk or water
🌸 1/2 mashed banana (I generally prefer desserts that are not very sweet. My palate has gotten used to less sweetness from not eating them. If you prefer, you can use only one banana and add 2 dates)
🌸 1.5 teaspoons raw cocoa powder
🌸 A pinch of baking powder or baking soda
I mixed everything together. We need to get a runny liquid. Then I added a handful of blueberries, but you can add cherries or blackberries, or you can omit them altogether.
I love blueberries. They are so beneficial. They are a bit expensive, but now is their season. I bought 1 kilo of organic ones from a website and stocked up in the refrigerator. They look amazing, look at this 🙂

Then I poured the mixture, about a tablespoon at a time, into a pan I’d greased with coconut oil. It cooked on low heat, flipping it over to cook both sides. When working with coconut flour, you always need to use low heat so the inside cooks through. The house was filled with the wonderful aroma of cocoa. It was ready in 10 minutes. With tea, it was a fantastic meal for me. I ate half of it at 6 pm and I’m still full. Coconut flour is truly a world leader at keeping you full with its high fiber content 😍
