
Of course, we were going to celebrate the arrival of autumn with cookies 😀 The weather here has gotten quite cool. So I thought, why not have a coffee and some cookies now? 🥰
🍁 1/2 cup almond flour or hazelnut flour – you can also get this by grinding almonds in a food processor. I can’t recommend any other flour in this recipe because I haven’t tried them.
🍁 1/2 cup oat flour
🍁 1 cup dried mulberries, ground in a food processor (you can see it in the link below).
🍁 1/4 cup water
🍁 1 tablespoon solid coconut oil, any oil you like will do. 1 tablespoon tahini or peanut butter also works.
🍁 A pinch of salt, be sure to add it, it goes very well.
I kneaded all the ingredients together. You can find the details at this link: https://www.instagram.com/p/CTSXdwjjt7s/ . I baked them in a 150-degree turbo oven (if you’re baking good quality oils like nuts, don’t exceed 150 degrees to preserve the oil’s structure) for 25-30 minutes.
Alternatives:
You can also add 1 teaspoon of cocoa to the mixture.
Instead of mulberries, you can make date puree with 6-7 fleshy dates. If you absorb 1/4 cup of water with the dates, you can maintain the same consistency without adding any more water 🙂
This is another one of those cookies that will make me shout, “Open the window and make them!” 😀
