
For the past two days, I’ve been craving bread. I’ve been frantically searching for something to eat. I kept putting it off, but this morning I decided to finally make something to satisfy my craving. It was a 5-minute improvisation, but it turned out delicious. I don’t know whether to call it a savory pastry or a savory crispy one.
– 6 tablespoons al dente cooked quinoa (mine was ready in the refrigerator, leftover from the weekend) 1:1 water to keep it al dente.
– 3 tablespoons chickpea flour – any flour will do, you can check my Instagram post for the right consistency.
– 1/2 tablespoon clarified butter (the foam I skimmed off while cooking, 1/2 tablespoon butter can also be used).
– 3 tablespoons grated cheese (optional)
– 1 egg white inside, yolk for brushing
– 2 tablespoons water – again, adjust the consistency according to the flour, following the video.
**Suitable for elimination diets without cheese.**
** I mixed everything together and kneaded it. I flattened it with my hands to the size of a teacup saucer. I brushed the top with egg yolk and sprinkled it with nigella seeds. I baked it in a 170-degree convection oven. I didn’t time it, but I think it was around 30 minutes. The quinoa is crunchy when you eat it. It was very delicious 😊
