These crackers are irresistibly delicious. They turned out so good. You can eat them with peace of mind. Instead of eating those preservative-filled crackers from the supermarket, you can make these in 5 minutes and enjoy them with your whole family 🙂

They’re so quick and easy to make, and they’re so good. I made a different version of this last year. Today I opened the fridge and used whatever flour I could find. Very little and completely healthy ingredients. I’ll make double the batch tomorrow because my husband loved them too. This will definitely be finished by tomorrow 🙂

Ingredients:

– 1/2 cup spelt flour

– 1/2 cup chickpea flour

– 1 egg, white inside, yolk outside

– 2 tablespoons yogurt whey (I used whey from homemade yogurt, milk will also work)

– 2 teaspoons clarified butter (you can find the recipe here)

– 1 teaspoon ground red pepper powder

– 1 teaspoon thyme

– Pumpkin seeds and sunflower seeds for garnish

The spices don’t have to be the same. You can add whatever you like. You can also omit any spices and just add a little salt.

I kneaded everything together and obtained a soft, sticky dough. I placed this dough on a baking sheet lined with parchment paper.

I placed another layer of parchment paper on top and rolled it out with a rolling pin. If you don’t use a second layer of parchment paper, the dough will all stick to the rolling pin because it’s quite a sticky dough.

When the dough reached a thickness of 2-3 mm, I removed the top parchment paper and cut the dough before baking. If you try to cut it after baking, it will definitely fall apart 🙂

Then I brushed egg yolk on top and sprinkled the seeds.

It baked in a 170-degree oven until crispy. Once cooled, it snapped easily along the cuts.

I highly recommend you try these crackers. Put them in your bag when you go out, give them to the kids at school, or keep them in your office drawer. They satisfy your snack cravings in a healthy way and are very filling.

Note: This recipe is not 100% gluten-free because it uses spelt flour, but you can make it 100% gluten-free by replacing the flour with quinoa, buckwheat, dried bean flour, etc.
