Kabak Pizza

Pizza is one of my favorite foods. If I want to cheat, it’s always pizza, but since I can’t eat pizza and gorge myself on carbohydrates whenever I want, I try to find alternatives. I usually use vegetables as the pizza base. The most successful one is a zucchini-based pizza. A friend of mine got her son, who doesn’t eat zucchini, to eat it this way 🙂

Ingredients:

For the base:

  • 1 grated, squeezed zucchini
  • 2 tablespoons organic whole wheat flour or, for gluten-free, buckwheat flour, quinoa flour, or 1 tablespoon coconut flour
  • 1 egg
  • Onion powder (optional)

Toppings:

Everything here is optional. I used Mihaliç cheese, olives, tomatoes, and oregano. You can add your favorite pizza toppings.

Knead all the base ingredients together, line a tart tin with parchment paper, and shape it with your hands. If you don’t have a tart tin, you can line a baking sheet with parchment paper and shape it into a round shape with your hands.

Bake in a preheated oven at 175 degrees Celsius (top and bottom heat) for about 20 minutes. Then add your toppings and put it back in the oven. When the cheese has melted and the top is golden brown, your pizza is ready.

This isn’t a crispy crust, but it’s still a delicious pizza alternative that satisfies your pizza craving. Enjoy!

Note to the recipe: Minimizing carbohydrate and grain intake helps balance blood sugar. We stay full longer. The more vegetables, the longer you feel full.
