It was done at lightning speed, another version is in the oven.

-I had 2 large, softened bananas. This is what I came up with while wondering what to do with them. 2 large bananas.

-8 tablespoons of oatmeal

I chopped it a little in a hand food processor, I didn’t make it like flour. I don’t think it would work with flour, I haven’t tried it. I think oatmeal gives it the crispness and fullness.

-1 handful of seeded black raisins – I chopped them with a knife. The ones that look black in the photo are those.

-2 dried apricots, I chopped them into small pieces. If I were making it for myself, I wouldn’t add them, but I added them because I thought the sweetness would be less intense. If you like it less sweet like me, don’t add them; if you like it sweet, you can add them.

-1 handful of salted peanuts, I chopped them in a hand food processor. I added these because I really like the sweet-salty mix. Any kind of nuts will do.

-2 teaspoons of solid coconut oil, it melted from the warmth of my hands while kneading – you can use any oil you like instead. Tahini or peanut/almond butter would also work.

-1/2 cinnamon stick, a pinch of ground ginger, and a little grated nutmeg (ginger and nutmeg are optional, but they give a lovely aroma)

-Sesame seeds for garnish

I kneaded everything together. You can check out the video on my Instagram account for all the steps and the consistency. I scooped it out with a spoon and placed it in the mold. I used this mold years ago for frozen things or making chocolate. Although it’s suitable for baking, this is the first time I’ve used a silicone mold for baking. Normally, I don’t feel comfortable with it, but this time, because of its shape and to make it photogenic, I overlooked it 🙂

It can also be shaped by hand in the tray or spread in a baking dish and cut before baking. It baked in a 150-degree turbo oven for 30 minutes. It was so delicious! The baked version is without bananas and slightly modified because I ran out of bananas at home. I’ll write about that soon 🙂 I strongly urge you to try this! 🥰
