Sema Özpekmezci glutensiz ekmek

We continue with the topic of “What is NOT a gluten-free diet?”. The bread you see in the image below is from a trip abroad where there was a gluten-free bread option on the menu.

Gluten-Free Bread
“Come on,” I said, “Maybe something good will come out of it. Maybe it will be real gluten-free bread.” Because they’re everywhere now. And when the bread arrived, I realized from its pure whiteness that it was completely starch. And for the first time – maybe in 10 years of eating gluten-free – I tasted these starchy breads. Packaged breads sold as “gluten-free bread” on supermarket shelves. The moment you bite into it, you get an incredible starchy taste and an artificial flavor. Eating these doesn’t mean eating gluten-free. They contain lots of starch, lots of leavening agents, lots of chemicals.

True gluten-free eating doesn’t actually mean eating bread, but if you really want to, it could be eating bread made with 100% buckwheat and sourdough. Or you can mix and make it yourself with quinoa, chickpeas, etc. But when you see something so white, refined, and processed, just because it has a “gluten-free” label doesn’t mean it’s healthy. It can be a lifesaver for people with celiac disease, of course, but if you don’t have celiac disease, please stay away from these kinds of bleached products.

With love,

Sema
