
Lately, I’ve been posting my favorite recipes from my Instagram account here so these beauties don’t get lost on Instagram. This is another one of my favorites.
Once, I boiled some black beans. I overcooked them, and they became very soft and mushy. Of course, I didn’t throw them away. While thinking about what to do with them, this savory cake came about.
It can be a wonderful accompaniment to afternoon tea or a quick solution for breakfast.
Ingredients:
- 3 cups of boiled black beans
- 2 eggs
- Plenty of cottage cheese
- Plenty of parsley
- Salt, pepper
- Half a packet of baking powder
- 3 tablespoons of olive oil
- Sesame seeds for garnish
I mixed all the ingredients except the sesame seeds in a food processor. If you don’t have a food processor, you can mash the beans with a fork and then mix in the other ingredients. I baked it in the oven at 175 degrees for about 35 minutes. You can test if it’s done by inserting a toothpick. If the toothpick comes out dry, your cake is done.

It has a very nice, fluffy texture. Walnuts would also be a great addition.
Note: This recipe is gluten-free as it doesn’t use grains. It contains protein from dried beans. This cake, which you can prepare on Sunday evening, will be a wonderful ready-made breakfast for the whole week.
