In my previous post, I shared some portable meal recipes. They were very popular. It turns out there was a great need for them. So I decided to continue this week. This time I’ve added some snacks as well.
I prepared these examples with salads and legumes, assuming there’s no place to heat them. If you have a place to heat them, you can add meatballs or meat alongside them. My priority was to get all the nutrients from a meal and feel full, even in a place without heating options.

Spinach Bowl
I had some meatless chickpea stew at home, and there was only a little left. I finished it off like this. Spinach sautéed in olive oil in a pan, topped with sesame seeds, and a little buckwheat pilaf on the side, and voilà, we have the now very popular “Bowl”.
I really love buckwheat; it’s not a grain. 1 cup of buckwheat cooks in 1 cup of water. Even if you soak it overnight, it’s ready the next day without cooking. I love to cook and eat it like classic pilaf.

Green Salad
When I go out, I prepare a salad like this. I add pumpkin seeds on top to keep me full, and sunflower seeds in between. The good fats here help us stay full. If it’s not too hot, you can also add cheese in between. It’s my only solution to avoid going hungry when I’m out.

Chickpea Chips
This is the perfect chip to snack on in the evenings while sitting down, or on your way to the cinema, keeping it in your office drawer. Soak the chickpeas overnight, or use pre-boiled ones. Drain them, pat them dry with a towel, and mix well with olive oil, salt, and your desired spices. Then bake in a 180-degree oven until crispy (approximately 30 minutes). It’s very beneficial for the whole family.
The crispiness decreases the next day, but if you put it back in the oven for another 5 minutes, it immediately becomes crispy again.

Mung Bean Salad
Once again, those boiled mung beans I had in the freezer came in handy. It became a lifesaver meal in five minutes. Boiled mung beans, topped with roasted eggplant or any other vegetable steamed for 5 minutes, pomegranate molasses, olive oil, and sumac… Enjoy a wonderful meal.
I’m sure you’re thinking of incorporating portable, non-spillable meals into your life based on these ideas. All of these are thousands of times better than eating things from outside where we don’t know what’s in them. And they’re all delicious.
