And here I am with my beloved bread, Socca!
Let me tell you about Socca, an Italian street food that I love very much. It's the easiest bread in the world to make and incredibly delicious.

  • 1/2 cup chickpea flour - Note: This bread is a traditional recipe. I haven't tried it with other flours; this is the original. Of course, anyone who wants can try it :)

  • 1/2 cup water

  • Salt

  • Olive oil for cooking

  • Flavorings are up to your preference. I used rosemary and cumin seeds.

We mix the chickpea flour and water. We add the salt. I prepared it in the morning and cooked it in the afternoon. It thickened a little while waiting.

You can also cook it at the same time.
I put olive oil in an oven-safe pan. I heated it. I poured in the mixture. Once the bottom was cooked, I put it in the oven, which I had preheated to 200 degrees Celsius, using only the top heating element. At this point, I also added the rosemary and cumin seeds. The top part also became crispy. I think it took about 15 minutes, and it was ready when it was crispy… The inside was almost like a flatbread 😀 Amazing flavor. You can also use this as a pizza base.

If you don't have an oven-safe pan, you can pour it into a glass baking dish or a flat tart mold and bake it in the oven with both top and bottom heat. It won't flip over in a pan on the stovetop, it will fall apart. That's why we need an oven :) This pan has a diameter of 20 cm. The amount of ingredients fit perfectly. A 1-2 cm larger one would also work, but a smaller one would be too thick and might not cook properly. I think this is just enough for one person. Of course, if you increase the quantity, the pan size should also increase :)
