Elimination-Friendly Recipes

While preparing a recipe file for a client, I remembered this and realized I hadn't shared it with you in a while. These carrot balls are so delicious! 😍 They're so tasty. A dessert ready in 10 minutes without baking. Usually, dates are added to these, but dates have a very high sugar content. I tried to achieve a more balanced sugar level and glycemic index by using the sweetness of the carrots and adding dried apricots. I think they taste amazing! 😍

- 1 cup grated carrots

- 6 dried apricots

- 1 tablespoon coconut flour (if you don't have coconut flour, you can increase the almonds by 1/2 cup or add 2-3 tablespoons of oatmeal)

- 1 cup almonds

- Cinnamon to taste

- 1/4 teaspoon ground ginger

- Dried coconut for decorating

Put all the ingredients in a food processor and blend. Once everything is mixed and forms a dough, shape it with your hands and coat it in dried coconut. Adding crushed walnuts to the dough is also wonderful. I don't add the walnuts at first because they disappear in the dough then.
